Fruity Green
Salad
- 2/3 c vegetable oil
- 1/3 c lemon juice
- 1/4 c sugar
- 2 t chopped green onions
- 3/4 t salt
- 1 t poppy seeds
- 8 c torn mixed salad greens (I used an organic herb mix from Safeway--it
has cilantro and dill and adds a nice flavor)
- 1 med red apple, chopped (I soaked it in lemon juice to prevent from browning)
- 1 med pear, chopped (same as above)
- 1 c chopped pecans
- 1 c (4 oz) shredded Swiss cheese (I used mozzarella)
- 1/4 c dried cranberries
- In a jar, combine first 6 ingredients; shake well. In a large salad bowl,
combine the remaining ingredients. Drizzle with dressing and toss to coat.
